Boutique Gourmet Dining at Belmont -

A dozen diners have the chance to book a five-course gourmet feast cooked by acclaimed chef Akshay Borges, with accommodation for the night in Unst’s luxurious Georgian country-house, the architectural jewel in Shetland's crown.

And they will also be offered a selection of local Shetland Reel gins before dinner, matched wines to accompany each course, and a flight of single malt whiskies afterwards, with coffee and chocolate. We're planning to offer this by arrangement if there is sufficient demand.

Mr Borges, former star of the Scalloway Hotel’s kitchens, has been mounting ‘pop-up’ restaurants in various locations over the past few months. This, though will be a unique residential dining experience. Belmont House was restored from a ruinous state by the Belmont Trust and is now run as self catering accommodation and as a venue. Before dinner: A selection of Shetland Reel gins

Bread
Rosemary and Shetland Sea Salt Rolls, Shetland butter Basket

Mussels
Shetland Blueshell Mussels with in a Spiced South Indian Tomato Rasam

Pork and Scallop
Pork Belly, celeriac Puree, Scallops, Local Black pudding, Apples

Fish
24hr Tandoori marinated Hake, Pickled Red Onion, Cumin and Fennel Salad

Lamb
French Trimmed Rack of Lamb, local kale pomme purée, Braised carrots, Roast Garlic and onion Puree

Dessert
Local Ale Cheesecake Mousse with Ginger Crumble and molasses Drizzle

After dinner: Coffee, tea, and flight of three single malt whiskies, with gin as an alternative. Chocolate.

Diners will be able to enjoy Belmont’s beautiful Georgian drawing room and next morning, with breakfast provided, they can explore Unst before returning home.

Diners will eat together in Belmont’s grand dining room. Cocktails will be served from 7.00pm, though guests may arrive any time from 3.30pm. Dinner will be at 7.45pm. Diners are invited to dress as befits the occasion and the location.

Cost is likely to be £135 per person excluding wines and other alcohol. Gin before dinner, five different wines matched to the courses by Mr Borges and the after dinner whisky tasting costs an additional £40 per guest. Water will also be served. Belmont has five bedrooms - 1 double, 2 twin, 1 bedroom with twin beds and two hand-built box beds plus a comfortable double sofa bed in the cosy sitting room. Extra nights’ accommodation may be available at a reduced rate.
